Burrito bowls are my weeknight hero. Basically you take any protein (or combination of proteins) you have leftover in the fridge, steam some rice, shred some luttuce, and put out all the fixings and you're done. Plus, with a DIY approach, everyone chooses their own combination of elements, which means everyone is happy. It's like magic.
Kid Duties - have your child do any or all:
Make rice (measure water, measure rice, start rice cooker)
Wash lettuce and chop (closely supervised, 6+)
Mash avocado
Ingredients: These are our recommended ingredients, but all are optional, and feel free to add your own - that's the beauty of burrito bowl night.
Leftover protein, heated
Steamed rice
1 can black beans or refried beans, heated
Avocado, sliced or mashed with salt and pepper (and lime juice if you're feeling fancy)
Jarred salsa
Shredded lettuce - iceberg, romaine or butter are all good
Sour Cream
Shredded Cheese
Sriracha sauce
