As I've mentioned before, I'm wary of smoothies and sugar, so I always try not to add too much fruit juice. This smoothie recipe serves 2 and only includes 1/3 of a cup of OJ total, and the rest is just frozen fruit, water and a handful of spinach. The kids love it and the fact that it uses blueberries means it hides the green from the spinach nicely. One of these after school or in the morning and I can relax if they don't eat much produce the rest of the day.
KI D D U T I E S : (kids can do any or all)
Older kids can learn to make the whole thing!
Younger kids can help put ingredients into the blender
I N G R E D I E N T S : (serves 2)
1 large frozen banana
2/3 cup frozen blueberries
handful of fresh baby spinach (start small and if your kids don't notice the flavor or texture, try a bit more the next time)
1/3 cup orange juice
1/3 cup water
I N S T R U C T I O N S :
Throw everything into the blender and blend until smooth, adding splashes of water if it's too frozen to blend well. Pour into 2 glasses and enjoy!
